As the grapes are frozen, they contain a highly concentrated mixture of sugar and acids which accounts for its rich taste which makes it different and exceptional from other wines.
Generally grapes used to produce ice wines include Riesling and Vidal though lately the red grape Cabernet Franc is also been used to make red ice wines. Riesling Ice wines have more acidity than Vidal ice wines. However Vidal grapes have become a popular choice for ice wines due to their tough skin required to survive long hanging period.
Available as Vidal, Riesling, Cabernet Franc and Oak aged, ice wines must be consumed with the right kind of food.
